Weekend update…..

How was your weekend? Our was nice. It seemed very busy and went by quick as well as not feeling very rested once Monday arrived. Friday evening we went to a Christmas party for Josh’s work. It was at a fancy hotel downtown. We got to dress up and since it was a family party, the boys came along. They served Mexican food, so we ate tortillas, salsa & chips, guacamole, beans and rice. At least we got to enjoy the dinner. Most Christmas party dinners are a bust for vegans. There was an elf for the kids to enjoy. She painted faces and made animal balloons. A DJ was playing music. I think all the kids used the dancefloor more than the adults. They were running around balloon sword fighting and being very silly. Arthur would go onto the dance floor and play and then would join us to eat. It was very good to hear from at least 5 different people the comment “Your boys are the best behaved children here. They are so calm and polite.” That was nice. In the lobby of the hotel there was a giant gingerbread city. It was awesome. I’m sure it took a lot of work. I would enjoy creating a masterpiece like that. When I showed it to Arthur, he said to me, “I need that in my mouth.” He is so silly.

 

Saturday we went to some friends home for a Hanukkah potluck. I brought sweet potato latkes and potato pancakes. It was pretty much a starch-filled potluck of goodness. There was vegan mac and cheeze as well as Hanukkah sugar cookies, vegan of course. We stayed for about an hour and then took the boys to see Christmas lights.

Arthur loves to help me bake. If he sees me in the kitchen getting out the flour then he will drag a dining room chair to the counter and say, “I want to help.” He helped make my chunky monkey brownie recipe and some Hanukkah sugar cookies. As you can tell from the chocolate on his face, he really enjoys being a helper and licking the bowl.  By the way, Josh is Jewish, so we celebrate Hanukkah and Christmas.

Last night I made a Mattar Tofu Paneer. I had tried it once before at a potluck I hosted. Godmommy Mary brought it over. It was so good, I hand to make it for us. The recipe comes from Vegan Dad  . And it is great. Simple ingredients and full of flavor.

 

Recently I read an article online titled “The 7 Foods Experts Won’t Eat”. I was happy to see that I do not eat 6 out of the 7 nor does my family. But the one I do eat, I was not pleased to see on the list. Ugh. The food was canned tomatoes and here is what it had to say. Yesterday I was in the grocery store doing our weekly shopping. A girl walks up to me and introduces herself. She tells me that she is a hairstylist and says that I have a fashionable style and could she cut my hair for free. She works for an upscale salon downtown and the haircuts start at $70 and upwards. Uh hello?!? Yes! She explained that before she can work on the floor of the salon, she needs to show her boss that she can do all 8 of the most classic, popular, fashionable styles. She has been cutting hair for over 2 years. I went in today, got my haircut for free. A wash, cut and style. I didn’t know the bob hairstyle was so fashion forward. Yay for me. Hee hee.

Well I am off to do my weekly baking. I am cooking a leek and bean cassoulet for the co-op tomorrow. It is the recipe from V-con. Hope you have a wonderful day.

Eating with the dinner co-op has been terrific. This is our second week. Here are the meals we ate this time around. Monday night we were delivered a white bean and sage dish. I served it with brown rice and we also got cornbread muffins to accompany the dish. It was a simple but very tasty dish. The boys loved the cornbread muffins and Arthur especially liked the cornbread in the shape of cactus. Tuesday we were delivered Seitanic Red and White Bean Jambaya with corn on the cob and cajun margarine to go with the corn. The recipe comes from V-con and let me just say, if you have V-con and you have not made this recipe yet, you are missing out. I have been wanting to make it and tasted it for the first time Tuesday. Wow! It was awesome. And I love corn on the cob especially with seasoned margarine. I was so glad we had leftovers to eat the next day. Wednesday was my night. I made a Mexican casserole. It is a recipe I recently created and it apparently has been a hit. Godmommy Mary made it for her coworkers and everyone loved it and I recieved a great compliment when Mary said the casserole cured her craving for cheese enchiladas. Such a nice thing to say. I served the dish with some Mexican rice which by no means is authentic. I just seasoned it with cumin, chili powder, salt and pepper. It was pretty tasty. I fried the rice first with some onion, then added tomato sauce and veg broth. Thursday evening we were brought a Lentil Shepherd’s Pie and a salad with a mustard vinagrette for dinner. I love Shepherd’s Pie and any kind of comfort food. Especially in the Winter. This week the weather has been cold and very damp, so this hit the spot. Like I said before, I am really starting to enjoy this dinner co-op. I hope it continues.

Lentil Shepherd’s Pie

Tonite we are going to Josh Christmas work party. We saw the dinner menu and there is actually food we can eat. Yippee! It is family friendly so the boys are coming along. Pending Arthur is better. He has had a cough this week and has feeling a bit puny. But he might be up for some dancing, facepainting, balloon animals and food. We shall see.
Tomorrow we are going to a Hanukkah Potluck. Tonite is the first night of Hanukkah. Happy Hanukkah. Josh is Jewish so we celebrate Hanukkah and Christmas. I know it is strange to some people but we chose to be open-minded and celebrate both holidays and tell the story about them to the boys when they are older. I am making sweet potato latkes for the potluck and some kind of dessert. I haven’t decided what yet.

Saving dough…..

Tips for saving some money.  What are your’s?  I would love to hear.

-Make your own vegetable broth. The scraps you would normally throw in the compost, put in a freezer storage bag. Place in the freezer, once it is full, put it in a large stock pot with 10 cups of water. Boil, then simmer covered for about 2 hours, let cool. Pour into storage containers. Now you have 8-10 cups of homemade vegetable stock. Throw the boiled scraps in the compost pile. Just beware of using pepper leftovers, not unless you want hot stock.

-If a friend wants to meet for lunch. Suggest a picnic if weather permits. It saves dining out.

-Make your own sauces and dressings.

-Make your own mayo and sour cream.

-Make your own spice mixes.

-Make a weekly grocery budget and stick to it. Take cash only to the grocery store so you can’t go over your budget.

-Make a weekly menu.

-Start a dinner co-op.

-Buy in bulk.

-Shop the sales ad and make your menu according to what is on sale.

-Use a clothes line. It can drastically cut your electric.

-Wash your clothes in cold water.

-Make your own laundry soap.

-If you have a baby, use cloth diapers. They save money, are better for the environment and great for your baby.

-Take your lunch.

-Drink coffee at home instead of the coffee shop.

-Set aside a certain amount of money for entertainment.

-Eat out less.

-Save gas for your car, by carpooling, walking, riding a bike or taking the bus to work. A monthly bus pass is cheaper than weekly gas fill-up in your car.

-Host a potluck. You get to try a variety of food and you only made one dish.

-Use cloth napkins. Buying paper napkins, not only wastes money but also is not environmentally friendly.

-Shop at thrift stores. What you need just might be there. It is cheaper, helps a charity and you saved some cash.

-Make handmade gifts.

-Grow vegetables. Gardening is fun. And most places have a nice enough climate to produce a Spring, Summer and Fall garden.

-Can foods when possible. Then you can use them at a later date.

-Double recipes, such as soups or casseroles and freeze them to eat later.

-Make your own bread, buns, and rolls.

-Make your own burger patties.

-Trade with others. Example: If you bake and a friend has a garden, trade veggies for baked goods.

-Make your own cleaning products. It is cheaper and better on the environment.

-Make your own insect repellent.

-Wash dishes by hand instead of using the dishwasher. It is a waste of money and water.

-Make your own granola. It is cheaper than buying it for $5 a pound and even more.

-Make your own desserts (cupcakes, pies, cookies, etc). Tastes much better than the store bought ones.

-Give gifts of food.

-Exercise outdoors or at home instead of going to a gym. There is no membership to workout at home or on the grass.

-Seek free activities in your city. (free yoga day, free museum day)

-If you go to a movie, go to a matinee.

-Take your own snacks to the movie theatre.

-Drink more water and less soda. Your wallet and kidneys will thank you.

-Make your own applesauce. Easy to make and smells so good simmering in the crockpot.

-Buy only produce that is on sale or discounted.

-Make your own baby food.

-Shop your local Asian Market. You can get tofu, rice vinegar, sesame oil, wonton wrappers, eggroll wrappers and other Asian cuisine items for cheap.

-Buy bags of potatoes. They are cheaper by the pound when bought in a bag.

-Dehydrate your own fruit and veggies.

-Make your own preserves.

-Check out books from your local library instead of buying them.

-Host a clothes swap.

-Make your own ice cream.

-Make your own seitan.

-Make your own soyrizo.

-Use dry beans for cooking, they are much cheaper than the canned ones.

-Make your own jerky (tofu jerky).

-Make your own granola bars.

How was your weekend? Ours was pretty good. Arthur had his scout meeting this weekend. He seemed to enjoy it. Josh had to work, so the boys I laid low on Saturday. We did a few craft projects. Arthur made some pipecleaner creatures which he loved. A while back he made acorn aliens. The project came from the Nickolodean website. He gave one to his Daddy to take to work. So sweet. He loves to paint, read and do projects with his hands. I try to implement a learning activity with the projects. And he especially loves animals so he can make a craft and learn fun facts. We made penguins out of toilet paper tubes. And he was excited to learn about penguins. When Josh got home, Arthur said “Daddy, penguins swim because they can’t fly. They eat fish and the daddies take care of the baby eggs.” I can’t wait until Adam can start to have learning time and craftiness with us. He sits with us during storytime for now.

Sunday was kind of a bummer for Arthur. Arthur started crying for me in the evening and then suddenly puked.  Poor guy looked so pale. Yesterday he seemed better, no more puke but still had a low fever. So I kept him on the recommended BRAT diet (banana, rice, applesauce & toast). It is a good diet for stomach bugs. He seems better today, but now has a little cough. When I called the nurse Sunday night, she said there have been no stomach bugs, just the flu and upper respitory illness. I hope he gets better soon. I hate to see my Boogie or Boo Boo feeling bad.

Friday night was our usual pizza night which is the best. We got a freeze that night as well. When we woke up Saturday morning it was 22 Farenheit. Which is cold for us. Super cold. Knowing that we were expecting a freeze, Friday afternoon I picked all of the green tomatoes off of the plants in our garden. I was growing beefsteak tomatoes. Some were huge, seriously as big as a grapefruit or larger. I was at first discouraged by all of my green tomatoes because I didn’t want to cook with them. I am not a fan of green tomato chutney or fried green tomatoes or even pickled green tomatoes. Josh tried one fresh off the vine and said they weren’t so great. I was fortunate enough to discover a website called “The Crunchy Chicken“. It is an environmental blog. It had a way for green tomatoes to ripen. And it was simple. Place the tomatoes in a paper bag, put an apple in the bag with the green tomatoes, close it and check on it in a week or two. I did this and it worked. Yippee! After I harvested over 80 green tomatoes ranging from grapefruit size to golf ball size I put them in two cardboard boxes, threw in an apple and now I am waiting for them to turn red. I am excited that they did not go to waste. When they are ready, I plan to make marinara and salsa.

Well as most of you know, I participate in a vegan dinner co-op. The first week was a big success. I did my grocery shopping for the week yesterday and thanks to the dinner co-op, my bill this week was only $51. Woo hoo! I love saving money and this is great. I have a page on this blog showing my attempt to cutback on the grocery bill and how to save some dough.

Dining at home….

…Co-op style. Free, delicious, homecooked vegan meals delivered to my front door. The vegan dinner co-op that I am part of is going well. It is 4 families and we each cook a meal once a week. This week was the first week. It is really strange for me not to cook 5-6 times a week. When 5:00 rolls around, I can relax three days a week instead of cooking dinner right off the bat. I love to cook, but it is a nice break. And the meals have been delicious. Nothing beats homemade vegan food delivered to you. Monday night, one of the mother’s brought over a sweet potato curry with basmati rice. It was garnished with fresh mint. It was very tasty and the mint was a perfect addition. She also included mini gingerbread muffins which the boys scarfed down. Tuesday night we were delivered a Spicy Eggplant Stew with Potatoes, Mushrooms & Chickpeas, whole wheat bread and a salad. The stew was so filling and delicious, I had no room for the salad so I opted to eat it for lunch the next day. The bread was homemade and so soft. Wow. Arthur had three slices of it and Adam had two. I am going to try to make the bread. Wednesday was my day to cook. The weather here has been cold and rainy, so I cooked the ancho chile lentil soup from V-con. I made some homemade baguettes using the recipe from The Garden of Vegan and served it with a salad and a spicy mustard vinagrette. I also made mac and cheeze for the kids and threw in some mixed veggies. Thursday night was another soup night. I know some of you might be thinking “soup twice in once week.” It was not a bad thing, believe me. The soups were different enough that it was not overkill. Plus it has been cold here and perfect for soup weather. Insert the quote from Austin Powers “It’s freakin’ freezing in here Mr. Bigglesworth.” Thursday night we were delivered a orange flavored black bean soup, homemade Ezekial bread and a side salad. I love beans and I especially “heart” black beans, so this soup was right up my alley. And who doesn’t love bread. Well maybe the people on the Atkins diet. Boy are they missing out. We are a bread loving family. And nothing beats homemade bread. It was funny to eat salads this week. As Josh once mentioned, we do not eat a lot of salads. People assume that all we vegetarians and vegans eat are salads. Not true. The salads were good and they were a great addition to the meals. As I mentioned in a previous post, the dinner co-op is doing a 1 month trial run. I hope it works out. The meals are delicious, there is minimal dishes and it isn’t difficult to cook for three other families. You just double your recipe. Our fridge and bellies are full of goodness.

Oh, and another great thing about a dinner co-op. It cuts down on the grocery bill since I cook three less meals a week. Now that’s a sweet deal!

Okay, so it has been cold here. Well, by our standards anyway. Nothing like Alaska. But, they did mention on the news that we might get some snow tomorrow. It is supposed to be 22 degrees in the morning. I hope there is some snow for the boys to see. I think they would love it.

Weekend update…..

How was your Thanksgiving? I was a bit under the weather, so I stayed home Thanksgiving Day while Josh and the boys went to our friend’s home. We did celebrate our own family Thanksgiving over the weekend. I made a ton of food. We also went to the children’s parade. The boys had fun seeing the floats and characters walking downtown. Afterwards, we had a picnic on the Capitol grounds. We brought Zeke. He did so well at the parade. He would let people pet him. On the Capitol grounds we had lunch and the boys and Zeke played. It was a beautiful day.

Arthur also helped me make the pies. We had pumpkin pie and chocolate pecan pie. Josh said that you would never know they were vegan. He loved them and so did the boys. So rich and delicious.

 

Sunday was my birthday. Josh took me out to lunch to celebrate and bought a vegan cookies and cream cake for me. It was terrific and delicious. He and the boys got me some wonderful gifts and we had such a great day. I love my family. By the way, thank you each for the lovely birthday wishes. It was also my 5 year cancer anniversary. It still makes me sad to know we lost our pregnancy, because I wonder what the baby would have looked like and how much fun Arthur and Adam would have had with their older sibling. When I was pregnant we nicknamed it Fife. For my Scottish friends, it is for the Kingdom of Fife where Joshua and I were married. I am thankful everyday for my beautiful boys Arthur and Adam and am so very blessed. I also know that they have an angel named Fife looking over them.We went to Whole Foods Sunday to grab a few things. We had parked underground because it was supposed to rain. Well, when we were leaving, there was a box of garbage near our car. In one of the boxes was a wilted airplane plant. It was limp and thrown away due to it looking not so desireable to leave on the showfloor of the floral department. Score! After some watering and hanging it outdoors, it is already starting to look great. Thanks Whole Foods.

Saturday was a dear friend of mine’s birthday. I made her a pillow. I embroidered a squid, placed it on some pink spotted fabric, framed it with a pale pink, stuffed it and made the backing a navy blue. I stopped by and surprised her with it. She loved it.

I also got a surprise Sunday morning, I almost forgot to mention. I woke up and Josh had made me blueberry pancakes for my birthday. While I was sitting in the living room drinking coffee, there was a knock on our front door and it was Godmommy Mary. She brought over my birthday present. It was a ceramic mini loaf pan that makes 4 mini loaves at a time. I can’t wait to use it. It is awesome. And that evening, another friend stopped by with a birthday gift. She had brought me flowers, a beautiful flower barret she made and some raw chocolate. It was such a nice surprise.The dinner co-op starts this week. I hope it works out. We are doing a month trial run. The meals sound delicious. And they are all vegan. Awesome! Tonites dish was a sweet potato curry over basmati rice. It was perfect. Adam loved it as well. Arthur denied it. He has been very picky lately. Normally he eats all that we offer him, but lately he has been saying “no”. So he opted for pb&j. Adam on the other hand, is our bottomless pit. He eats everything and comes back for seconds and thirds. Arthur went through a phase when he was a year old of not wanting much to eat and he seems to be doing it again. Tonite he had raw veggies and fruit. And I am going to give him some crackers and peanut butter for a snack later.

Hi there. Last night I made chili. So good. I actually used the recipe from Scratch-sniff’s blog. She won second place in the Lone Star Vegetarian Chili Cook-off. It was delicious. I did break a rule when it comes to making Texas chili. I added beans to mine. Hey, I like beans and I wanted some in mine. I served it with some sweet cornbread. Such goodness on a cool night.

 

 

 

 

 

 

Well tomorrow is Thanksgiving. I am glad we are not doing much for driving. I was reading an article that said Thanksgiving is the most dangerous road travel holiday. That is some crazy statistics. It is more dangerous than New Year’s Eve. I never would have guessed. Tonite I am making some homemade bread, mashed potatoes, gravy and I will be throwing the Tofurky in the oven tomorrow morning to take to our friend’s home. I think it will be fun.

Playing with pie….

Last night I made a portabello mushroom pot pie. It had portabellos, button mushrooms, carrots, onion, celery, tvp, fresh sage, fresh thyme and a vegetable broth gravy. I made a funny face on the top crust for the boys. Arthur loved the pie. He said “what’s his name?” We told him it is “Paulie the pot pie”. He said “oooh, I want to try some.” Which of course we loved. We are fortunate that our boys we eat almost everything, but when I am not sure if they will, I try to do something fun with the dinner, whether it be making a silly face on a pot pie, or letting Arthur help with dinner, or using fun shaped pasta. Something to make it interesting. When Josh saw the pie he said it was awesome. The face and the taste. We are very silly in our home and since I love to cook, I try to make eating your vegetables fun.

Yesterday morning I did my weekly baking. I made apricot bread and blueberry banana muffins. The apricot bread is a recipe from “How It All Vegan”. It is delicious. I love dried apricots. The muffin recipe is from “La Dolce Vegan”. Simple and tasty.

What are your Thanksgiving plans? We are going to a friend’s house for Thanksgiving. She has her hands full with three new children she adopted so myself and another friend are cooking her a big dinner. I will miss seeing my family but it is nice to help another person. I am cooking a big Thanksgiving dinner on “Black Friday” for Josh and the boys. While everyone is out going crazy shopping we will be indoors eating and watching movies and going to the playground if weather permits. Here is our menu for Thanksgiving:

Speaking of Tofurky. I went a little crazy with the Tofurky this year. I bought three. The local coop had them on sale for $8.99 which is the best price in town. Since Tofurky is once a year. I wanted to have one for Christmas as well. I am taking one to my friend’s home and there will most likely be leftoevers which is fine by me. I “heart” Tofurky.

I read an article last week on Yahoo news about clotheslines. The article said that some states have problems with people having clotheslines in their yard. So much that 5 states have actually banned having a clothesline. I thought this was not cool. Not cool at all. I think a person should be allowed to have a clothesline in their backyard. People who hang their clothes out to dry instead of using a dryer save an average of $83 a month on their electric bill. In the South it is so warm that the clothes will dry within an hour. And we do not get rain that often. I think that they should be allowed, but some politics seem to disagree.

Our dinner coop starts next week. I am super excited. There are 4 families involved so that means that we will get three vegan meals delivered to us each week. Terrific! We are doing a one month trial run to see how it works out and if anyone has any problems or needs to drop out of the coop. It is a great group of families so I hope it works. I am making the ancho chile lentil soup from V-con. I will be serving it with a salad and homemade baguettes. The meals the other mums have listed sound so tasty. And it is also nice to cut back on the grocery bill. Yippee!

Well I am off to make a big crockpot full of chili. It is chilly and rainy today. It will be a nice, warm and hearty meal to go with some cornbread.
