Cooking with the co-op…

I have mentioned before and I will say it again.  I love our dinner co-op.  Don’t get me wrong, I love to cook.  But there is something so nice about having awesome vegan meals delivered to your door.  I wish everyone could participate in a vegan dinner co-op.  Our meals so far this week have rocked as usual.  Monday we were delivered a giant chipotle white bean dish.  It’s a layered dish of beans, kale, chipotle and tomatoes.  It is baked with breadcrumbs on top and then drizzled with cilantro pesto.  Delicious!  It had a side of red bell pepper tomato salad and bread. 

Tuesday night we were delivered a mushroom, kale, tofu dish served with quinoa and sweet potato fries.  It was great.  And what was even better was the fact that the boys enjoyed it as well.  Little bear Adam ate everything, including the mushrooms.  Arthur ate the quinoa and tofu.  This made us very happy because he usually wants bread.  He loves bread.

Monday I created a recipe for Apricot Date Granola.  It is so tasty.  As I mentioned before, I make granola for us because the cost at the store is ridiculous.  The boys loved it too.

Today I am making a roasted coconut carrot soup for the dinner co-op.  The weather is turning warm, so this will most likely be one of the last soups until Fall.  I am serving the soup with a salad.  Some of the greens are from our garden.  Yippee!  And bread.  It is Passover this week, so we will not be eating the bread.
