Well, hello there.  Can you believe February is already over?  What?  Wait!  Where has the time gone?  Between riding 40 plus miles a week, pulling the boys (115 pounds of bike trailer & kids), cooking, being a stay at home mum, etc.  I honestly can’t tell you where the time has gone or if anything exciting has happened.  One thing I have been doing and always do, is cook.  :)

One evening, I made Aloo Gobi.  It was quite lovely. I used fresh, mixed, organic cauliflower from the local farm.  Such goodness.

One evening, we had Southern comfort food.  I made crispy seitan fingers with a cream gravy, roasted new potatoes with rosemary, and balsalmic roasted brussels.  It was great.

I made tacos too.  I love, love, love tacos.  We always make homemade tortillas, because nothing tastes better than a homemade tortilla.  I made black bean, sweet potato, spinach tacos, and potato, swiss chard, apple sage sausage tacos.  We topped them with a nutritional yeast sauce and salsa.  They were the best!

Last night’s dinner was quick and easy. I made a kale pesto and mixed it with some whole wheat noodles, added some sauteed veggies, and sausage, topped it with some vegan goat cheese I made, and “tah dah”.  Dinner is served. I love how green the noodles look from the kale pesto.

Well, I am off to eat some dinner.  We are having soup and homemade bread.  The perfect meal for a rainy, overcast day.

Noodleishiousness……

Okay, so that’s not a word.  But, the noodle dish I made for dinner today was delicious!  It was a recipe I found online from Vegetarian Times.  I added fresh spinach, cashews, and carrots.  I also switched the sesame noodles out for soba noodles.  It made a ton and the boys enjoyed it as well.

I was glad to make an easy meal this evening.  Today’s 20 miles on the bike was exhausting.  I definitely felt it on this ride.  Geesh.  I am still tired.  Thank goodness, the weather is nice.

So, it is Fat Tuesday. I am obviously not doing anything.  That is very obvious, seeing that I am updating the blog in the evening while everyone is getting ready to party or at a party.  Are you celebrating? 

Well, I am off to relax a bit and hopefully call it an evening.  Thank goodness the week is halfway over.

Green goodness…..

For dinner this evening, I made a broccoli/cashew stirfry.  I served it over brown rice.  The sauce was sweet and the red pepper flakes made the dish spicy.  A perfect combination. 

I bought the broccoli from the Farmers Market.  The local, organic farm had beautiful bags of broccoli.  In the silence, I could hear the broccoli calling my name.  Hee hee.  Nothing beats, fresh and organic.

It is funny when I think about broccoli now as compared to when I was a kid. My boys love raw broccoli. I don’t recall ever being much of a fan of broccoli growing up.  But then again, I hated mushrooms, and now I love them.  I also think it has to do with being raised by people whose idea of a meal is the box you find in the freezer case.  I recall being in the grocery store and hearing, “Go pick out your dinner.”  It was either a tv dinner or a frozen pot pie.  You know, the kind that are a buck each.  Yikes!

Broccoli also reminds me of the scene from Seinfeld when Newman says he likes broccoli.  He takes a bite, then spits it out and yells, “Vile Weed!”  I love it.

So, tomorrow is Fat Tuesday.  Do you have plans?  Are you giving anything up for Lent?  I forgot it was tomorrow, until I heard a friend mention it.  It is just a regular Tuesday for a busy mum with two little boys.  If you are celebrating, I hope you have fun.  Be safe.

Pizza, Pizza, Daddy-o

I made pizza tonite.  It was perfect.  We haven’t had a decent homemade pizza in over 8 months.  The place we previously lived in, had a craptastic, useless oven. I was thoroughly amazed that the bread and muffins I baked didn’t turn out tasting or looking like a hockey pucks.  Worst. Oven. Ever.  Our new place has a brand new oven.  The crust was baked to perfection, crispy  and golden. 

I made a cheeze pizza for my wee fellows and a vegan pepperoni, cheeze, veggie pizza for Josh and myself.  I served our pizza with a side of the kale salad.  The pizza was wonderful.  And we each get a slice for lunch tomorrow.  Happy dance. 

We have gone out to pizza joints and tried their vegan pizza.  Not to sound like a snob, but the pizza was just, “Meh”.  I prefer homemade.  As I have mentioned before I am a bit picky and rarely go out to eat.  Tonite’s pizza was boss.  In a few weeks, we are supposed to have Godmommy Mary over for some pizza making.  I am already looking forward to it.

Breakfast love…..

Sunday morning is always big breakfast day for us.  We always, always make sure we have nothing planned on Sunday mornings if we can help it.  Josh and I wake up, enjoy a cup of jo while reading.  Once the boys wake up, we start breakfast and it is always good.  This morning was no exception.  Josh made strawberry/blueberry pancakes, and I made tofu scramble.

After breakfast we went on a 10 mile bike ride and then to the park for the boys to play.  It was great. 

Before heading to the park, I made a lovely kale salad for us to take with us.  My friend Tom who lives in a neighboring city gave me the recipe. It is a replica of a recipe from a vegetarian restaurant near his home.  It was so good, even our youngest enjoyed it. 

After it raining Thursday through last night, it was nice to get outdoors and enjoy some lovely weather.  I am starting think that winter has passed us over once again.  I am so not looking forward to another record breaking summer.  Oy!

Hot Tamale!!!!!

Yesterday, we went to our friend Georgianne’s house and made tamales.  A lot of tamales.  I brought over a crock pot of pinto beans.  While they were simmering, we made tamales.  We made at least 4 dozen.  We made sweet potato/walnut and swiss chard/potato/apple sage vegan sausage.  The swiss chard was fresh from the garden.  The tamales were amazing and well worth all of the work.  We had a ton left over.  We now have some tamale goodness in our freezer.

The pinto beans were delicious.  I love dry beans and I especially love refried beans.  I simmered a pound of pinto beans in the crockpot with 8 cups of homemade veggie broth, chopped cilantro, onion, garlic, salt, pepper, and a chopped tomato.  Once they were done cooking, I turned the crockpot of pintos into a crockpot of refried beans.  Yum!

And that brings me to my thoughts on dry versus canned.  I prefer dried beans.  You get more for your money, they taste better, meaning they don’t have that weird can after taste, and there is no BPA in dry beans.  If you don’t know what BPA is, look it up. It is a chemical found in the cans used to store foods.  It leaches toxic chemicals.  No thanks.

Light and lovely….

Tonite I made a lovely meal for us.  I roasted some local, organic purple cauliflower and added it to some sauteed local, organic swiss chard and garlic.  I also sauteed some fresh ginger, added a splash of sesame oil, rice vinegar, and tamari. I served it over a bed organic forbidden noodles aka black rice noodles.  It was delicious.  I love purple cauliflower.  It is so pretty.  The boys enjoyed the meal as well.

Well, tomorrow is Friday.  Happy dance!  Do you have any plans for the weekend?  We will finish unpacking and relax.  And hopefully attend a tamale making party.  Yay!

I am off to watch ET with my guys and eat a cupcake.  After 20 miles on the bike, I am treating myself.  Hope you have a lovely evening.

I’m back….

After a ton of unpacking.  Oy!  I am back.  The kitchen was unpacked first.  Hee hee.  Priorities.  We love the place and the boys are thrilled.  Moving is such a pain, but we are happy, so all the heavy lifting was well worth it.

One thing I love about the new place, new appliances.  We have a brand new stove and a brand new refrigerator.  Yippee!  I have already baked scones, three diffrent types of muffins, and bread all before Tuesday.  :)

And of course I cooked.  We went out to eat twice during our move and not to sound like a snob, but after dining away from home, I would much rather cook instead of dine at a restaurant.  The food was good, not great. 

Monday, I utilized the crockpot.  Since I was busy unpacking I needed something that would cook itself.  I did a “Everything but the kitchen sink” type of red curry stew.  I was tasty and easy to make.  I love those type of meals.

Last night I made a lovely pasta dish.  After riding 12 miles, the pasta hit the spot.  It was wholewheat pasta with a broccoli pesto, veggies, almonds, avocado, a nutty vegan cheese, and red pepper flakes.  It was amazing.

Tonite I made tacos.  As I mentioned earlier, we went out to eat during our move.  One of the meals was “meh”.  It was at a Mexican restaurant and wasn’t really worth the money it cost taste wise.  So tonite, I decided to make tacos.  They were amazing.  I made potato kale tacos with avocado, salsa, and a nutritional yeast sauce.  And of course homemade tortillas.  I served the tacos with a side of refried beans, never from a can.  It was perfect.

Well I am off to bed. I have an 18.5 mile bike ride tomorrow.  Good times.  Hope you have a lovely evening.

Easy Curry…..

Tonite’s dinner was brought to you by our lovely crockpot and my friend DJ.  She sent me this recipe.  Easy and delicious.  It was a red curry tofu and veggies over brown rice.  When I came home from riding this afternoon, I walked into our place and it smelled amazing.  Thank you, DJ.  It was great.
