Fancy pants pizza….

Well, yesterday we received our first CSA share from a new CSA we were trying.  There is no picture, because we were very disappointed.  The amount of produce we got for our money, was small, and when I say small, I mean small. A different CSA we tried last year gave us a ton of produce, a big bargain for your money.  All organic, and perfect.  Lesson learned, we will not use this CSA again.

For dinner, I made a fancy pizza.  It was not your typical vegan meat and cheese pizza.  I made a homemade crust, lightly brushed it with a little olive oil, put some sliced radicchio on it, white beans that I had gently sauteed in a little red wine vinegar and sea salt, some carmelized leeks, topped it with a vegan nutty goat cheese, and fresh thyme.  It was unique and delicious.  We had half  a head of radicchio from our CSA share and I wanted to use it along with the leeks we got.

I also made some refrigerator pickles.  There were 4 cucumbers in the CSA share, we got half of them, so I decided to use them for some pickles.  The recipe I used was sent to me from a friend.  She found the recipe online.  The pickles are easy to make and delicious.  They will be so tasty next week with our vegan pastrami on rye sandwiches.  Mmmm.

Tomorrow is Friday.  Happy dance!  After our youngest being sick yesterday, and wee bit grumpy this morning, I welcome the weekend.  Do you have any plans?

Beans, beans, the musical fruit….

You know how the song goes.  Ha ha.  I cooked up a big crockpot of pinto beans.  I season them with cumin, chili powder, sea salt, onion, fresh cilantro, and homemade veggie broth.

Beans are your friend. They are simple to cook, tasty, very versatile, and easy on the pocketbook.  We always buy dried beans, you get more for your money.

Today, the crockpot came in handy.  Our 3 year old was very sick last night, think projectile emesis. Poor guy.  So, this mum was exhausted after a 2 am wake up from a sick baby, and two more rounds of emesis.  Needless to say, he has perked up.  The crockpot has saved the day and the beans smell delicious simmering.  We plan to turn some into refried beans, and eat some by the bowl full.  We will also freeze some for later use.  A favorite, simple, and frugal meal using beans, is the peasants meal.  It is beans, rice, and salsa.  You can also throw in some veggies if you have them on hand.  Cheap and delicious.

Pierogies! Pierogies! Pierogies!

I made pierogies for the first time, and they were AMAZING.  They were a hit with the whole family.  And the recipe made a ton.  So, we have leftovers, and  some for the freezer.  Yippee!  My dear friend DJ sent me her recipe and they were so worth the time and effort to make.  I will admit, I was paranoid making them for the first time. I had nightmares that I was going to drop the pierogie into the boiling water, and they disintegrate.  But, they didn’t.  Instead, they floated perfectly in the water, and cooked to perfection.  I pan fried a few for our dinner, and served it with our homemade apple sage sausage recipe, and a raw kale salad.  Thank you again, DJ. 

Today is Monday. I am not used to us having Mondays off with Daddy.  We had a great day.  Tomorrow, we are back to the regular weekly routine.  Hope you had a lovely weekend.

Sunday, lovely Sunday…..

This morning we woke up and made gingerbread waffles.  There is something amazing about fresh grated ginger, then you add fresh ground nutmeg, cloves, and blackstrap molasses.  Oh my.  Josh topped them with fresh organic strawberries.  Heavenly.

After breakfast, we stopped by our new, favorite Farmers Market.  We love it.  It is super kid-friendly, and has all kinds of goodness.We bought some peaches, hibiscus tea, some locally made vegan donuts as a treat for the boys, and Indian food.  A lovely man has a booth at the Farmers Market.  He sells some of the best Indian food I have ever tasted.  We bought pumpkin parantha, spinach pakoras, and a seven lentil tarka dahl.  Oh my, was it delicious.

Oh no, the 3 day weekend ends tomorrow.  We shall finish it with some lovely pierogies, homemade vegan apple sage sausage, and some greens.  Hope you are having a wonderful weekend.

Caribbean night…..

After a busy day, we came home this afernoon a little tired, but ready for dinner.  I made Caribbean food, and oh my goodness, it was amazing.  I made Jamaican jerk tofu, papaya/mango salsa, and Caribbean rice and beans.  For dessert, I made a banana bread pudding with a homemade caramel sauce.  It was seriously one of the best desserts I have ever tried.  Oh so good.

TGIF!!!!!

I plan on cooking up a storm this weekend.  Today, I made bread to use later this weekend for pudding.  I also made a cream of mushroom soup. I had some mushrooms that were turning, and as I mentioned before, I loathe wasting food.  So, I made the soup and put it in small containers in the freezer to use later. I will use it for future pot pies, and casseroles. 

For dinner I made African rolls.  It is a favorite dish around here.  Josh ranks it in his top ten.  It is tortillas, in this case homemade tortillas, mashed sweet potatoes, brown rice, steamed kale, fresh sprouts, a dash of hot sauce, and a spicy cilantro peanut sauce.  They are oh so delicious.  The boys had rice, sweet potato mash in a tortilla, with some kale chips on the side.

As for the cooking this weekend.  Josh was at the discount book store a week ago looking for a book and he brought us home a treat.  He picked this book up for me.  I have the first book, ‘World Food Cafe’, which is by far my favorite cookbook.  To my surprise, the authors had written a second one.  So, I plan to cook out of the book and make Caribbean food.  Yum!  I also found a Caribbean dessert recipe, banana bread pudding.  Bread pudding with bananas, toppped with a homemade caramel sauce.  Yes, please!

And, thanks to my dear friend DJ for posting her periogie recipe. I am going to make periogies for the first time.  I am excited. I plan to serve them with vegan sour cream, and hot sauce.  Mmm, mmm.

I “heart” leftovers…..

Recently, my dear friend DJ at Skint Vegan posted about leftovers.  I love, love, love leftovers.  They have been a lifesaver to this mum when we had a crazy day.  Plus, I seriously loathe wasting food.  This evening, Daddy had to work late, so the boys and I had leftovers.  We ate emapanadas.  Mmmm.  Now, I don’t need to post a picture, since I did the other day when I made the empanadas.  They were delicious even as leftovers.

Tomorrow night, we are having leftovers again.  No wasting food around here.  Plus, we want to go to the library, so a quick dinner is in order. 

Well, off to run errands and hope the weekend gets here soon.

I’m going bananas…..

Ha!  Ha!  Not really.  But we do eat a lot of bananas around here.  I have one in my raw smoothie every morning, and the boys eat one each day as well.  When we made empanadas with our friends last Sunday, she had some bananas that were very ripe and asked if I wanted them.  Of course!  Ta Da!  They turned into lovely banana bread.

It was a great snack for my Little Bear cub who was under the weather yesterday.

For dinner Monday night, I made breakfast.  Don’t you just love breakfast for dinner?  We do.  All that was missing was a lovely stack of pancakes.  I made tofu scramble, refried black beans, and roasted potatoes.

Last night’s dinner was simple, yet tasty.  I roasted garlic and potatoes together with some fresh rosemary.  And I made a simple saute of apple sage sausage (vegan of course), white beans, and fresh swiss chard from our friend’s garden.  I seasoned the dish with a splash of red wine vinegar, a little salt and pepper.  It was great.

Well, it’s Wednesday.  The week is half over.  Yippee!  We have a 3 day weekend here.  I can’t wait.  I am off to make some field roast and take care of the never ending pile of laundry.  Hope you have a lovely day.

Empanada love…..

Yesterday, we went to our friend’s house and made empanadas.  Yum!  We made peach/ginger. sweet potato/pinto, and apple sage sausage/potato/swiss chard.  They were amazing.  I was on a total empanada kick. In addition to those, I came home and later made roasted sweet potato/black bean, and tofu scramble/roasted potato/cheese emapanada.  Can you say, “Super awesome breakfast”?  Yes, please.

Saturday, I also made kolaches as a treat for my guys. They were amazing for breakfast Sunday morning. I made peach, apple, cream cheeze, and chocolate. I found a recipe that I veganized. They were seriously delicious.  I will be making them again in the very near future and changing up the fillings.  Oh, and making some vegan sausage ones too.

I made kale chips and chickpea crunchers for the boys this morning. Now, to clean the house.  Hope you have a lovely Monday.

Pita! Pita!

I made pitas for the first time.  They turned out super tasty and I will definitely make them again.  No need to buy any from the store from now on.  The boys loved them.  I didn’t roll them out perfectly round.  They are more uterus shaped. Oops!  We had them for dinner with our falafel, and homemade hummus.  We filled the pitas with hummus, falafel, olives, onion, tomato, spinach, and drizzled it with a red wine/mustard vinagrette.  It was so tasty.

After dinner, we headed to the park for a little evening playtime and then the library.  The boys had a blast and are ready for bed.
