Soup’s on…..

Good morning. How are you today? The week is almost done. Yippee! Josh is off this weekend which makes it even better.

Last night I made a delicious coconut curry butternut squash. It was heavenly and made quite a bit. The recipe comes from the site Not Eating Out in New York. It is a great website about a lady who decided not to eat out anymore. She shows how she saves money and how the food is healthy and delicious. Another bonus about this soup, it costs under $5 to make. Even better.








I also made some peanut butter banana granola bars. They were very good, a hit with the whole family. I wanted to make some kind of snack for Josh while he is at work. Something nutritious but delicious as well. I came up with these little bars.

PB Banana Granola Bars

1 1/2c granola

1 1/2c flour

1/4c brown sugar

1/2t baking powder

3/4c margarine, melted

2 ripe bananas, mashed

1/4c peanut butter

1/2c chocolate chips (optional)

Preheat oven to 350F. In a mixing bowl combine granola, flour, sugar and baking powder. Stir in the margarine, making sure all is combined. In a small bowl, combine bananas and peanut butter. Microwave for a minute or two if necessary to soften the pb. In a lightly sprayed 9X9 baking dish. Pour half of the granola mix in the bottom of the pan. Spread evenly in bottom and press down with your fingers. Pour pb/banana mix on top. If using chocolate chips, sprinkle them on top of the pb mixture. Take the rest of the granola mix and sprinkle it evenly over the top of the pb and bananas. Making sure the pb mix is covered. Gently press down with your fingers. Place in the oven and bake for 30-35 minutes. Let cool, then cut into bars. Enjoy!








I also made pumpkin bread. I used the recipe from VWAV. It is for muffins and I just baked it longer and made bread. It is so good.

Smurfette and I were going to volunteer at a organic family farm this weekend. In exchange for your volunteer time you get a big box of produce from the farm which would have been awesome. Unfortunately they have temporarily stopped the Saturday volunteering. The only other days are Wednesday and Friday. Since Josh works those mornings and children under 12 are not allowed, I can’t go. Lame. Hopefully they will bring back the Saturday volunteering sooner than later.

Some friends have started a dinner coop that I am really excited about. Originally it was going to be vegetarian and vegan and it fell through. Now it is going to be a strict vegan dinner coop. I think it will be great to try other families vegan meals. The plus side is delicious and nutritious vegan meals will be delivered to my door twice a week. That means less cooking for me. And I am looking forward to cooking a meal for the other families for them to enjoy. It should be fun.

  1. Coconut curry squash soup sounds delicious! I’m a huge fan of anything with coconut and curry…the PB bars sound amazing too. I’d like to start making my own bars to eat before going to the gym.

  3. Mmmm – curried coconut butternut squash soup sounds heavenly – I love a bit of sweet and spicy! And those granola bars sound awesome! Bummer about the saturday volunteering gig but at least your dinner-co-op is still on track – such a good idea!! Love Arthur’s ‘tache, btw!

  5. I’m part of a dinnershare and LOVE it! It is so nice to have dinner delivered and not have to think about it at all. You will never want to go back to a life without dinnershare again. Plus it is really fun to cook for the others.
