How lo can you go???

Pretty darn low if you are cooking with Vegan on the Cheap.  Last night I made the Quick Lo Mein recipe.  It was good.  And cost us only 23cents to make.  We had all the ingredients, the only cost was the 4 mushrooms I bought.  I subbed broccoli from our garden in place of cabbage and added sauteed arugula to the mix.  The only change I would make in the future is to marinate the tofu in tamari and bake it, instead of fry it like the recipe suggests.  The recipe made 5-6 servings.  In the book, it states it makes 4.  So, that is even better.  The book also averages the cost per serving to be <$2.00.  The lo mein was tasty and similar to what I have tasted at a Chinese restaraunt.  This version is cheaper and much more tastier than going out to eat.

  1. I’ll try that! Today, from the book, I made samosa pie for dinner, which we’ll have this evening with steamed broccoli. Mmmm, in anticipation! The bits I licked off the spoon before putting it in the washing up bowl were tasty!
