We’re back…..

Did you miss us?  Hee hee.  We had a lovely time visiting Josh’s family in Florida.  They are awesome.  Seriously the nicest people you will ever meet.  And Florida, wow!  It is called the “Sunshine State.”   It should be called the “Vegan-friendly State.”  We ate so well while we were on holiday.  All the food was amazing.  We drove to Florida stopping in New Orleans.  We walked around the French Quarter and the Garden District.  It was humid but lovely.  We had a wonderful cup of coffee from Cafe Dumond.  It is the original French market coffee stand, 134 years old.  And some of the best coffee you will ever taste.  We brought our soy creamer.  When we got to Florida Josh’s sister-in-law, which I call her my sister-in-law because she is awesome and I love her, made us a wonderful pasta dish.  It was very tasty and nice to eat after a long drive. The boys liked, even Mr. Pickypants Boogie.  We enjoyed the beach on our holiday.  The Florida beaches are so white and the water is blue.  It is absolutely beautiful.  We even saw a stingray hanging out in the shallow water near the house.  There were dolphins swimming and a nice breeze blowing all the time.  I told Josh, it makes me want to move there.  I could do without the hurricanes though.  We had  a big family dinner while there.  Josh’s mum, myself, and our sister-in-law all cooked, while the guys grilled.  I  made African rolls, it was fun to cook in the kitchen together.  There was a house full of people dining on good food, chatting, and just enjoying each others company.  The way family dinners should be.  Our last night in Florida, we were treated to  a vegan dinner at a local restaurant.  It was terrific.  Everything we ordered was fantastic.  I wish we had a vegan restaurant like that here. It was seriously impressive. 

When we got home there was a ton of tomatoes waiting for us.  Over  a 100 tomatoes were harvested from the garden while we were on holiday. Thanks Mary!  So, I will spend the week canning.  Yesterday I made stewed tomatoes.  Today I plan to make marinara and later in the week, salsa.  It is great.  I love it. 

Over the weekend, it was back to cooking with Vegan on the Cheap.  I made the wheatballs.  Wow, were they tasty.  I served it with some homemade marinara and pasta.  The marinara was quite tasty, I mixed in some roasted eggplant and roasted portabella.  The wheatballs were a hit.  The recipe made quite a bit and will definitely be a repeat.  The cost to make the wheatballs was 70 cents.  We had all the ingredients but the mushrooms.  In VOTC, the cost per serving is <50 cents and it makes close to 30 wheatballs.  This is definitely worth making.  We have tried other meatball substitute recipes and this one is the best. Once again, Robin has hit one out of the park.

Sunday was Fathers Day.  I made Josh and the boys some gingerbread waffles with fresh strawberries.  We relaxed and enjoyed the day together.  For dinner Josh requested I make Philly Cheezesteaks.  I veganized a recipe last year. And it is one of his favorites. Being a guy from the East Coast, he loves the taste of these.  Who can blame him?  They are awesome.  For dessert, I made the Tiramisu Bread Pudding recipe from VOTC.  Holy tofu!  This was divine.  Simple to make, yet so rich and tasty.  It cost a $1 to make.  I had to buy some tofu.  VOTC states the cost to be <$1.00 and it serves 6.  If you bought this dessert in a restaurant, it would be around $4 per serving.  This was perfect.

  2. Yes, of course I’ve missed you! But I knew that was selfish, because you deserved a great holiday and I’m so glad you had one! Lovely photos, as always. You are such a sweet family! And I’ll be trying those wheatballs next!

  3. So happy to hear you were out having fun…you all look so refreshed and you look so eager to continue with your cheap cooking spree. My tomato plants are now full of flowers so in the Fall I’ll also be canning. I love all these dishes you are making with VOTC book, its really amazing the great dishes that can be made for so little $$$$$. I must pick this book up pronto.

  4. Glad you had a great vacay! And I’m glad the oil spill ickies stayed away. I love Cafe du Monde in NOLA. Every time we go down there, my mom brings some homemade vegan beignets for me so I can enjoy them with my chicory coffee. I heart chicory coffee!

  8. Those waffles look great! I am glad to hear you had a nice vacation. Mine starts in 2 weeks. Aurthur looks so grown up in that water! 🙂
