Hello to you….

Sorry for the lack of posts.  We were running around all day Monday.  Boogie had to go to an audiologist for a hearing test.  He has failed a basic hearing test at his yearly check-up and we were advised to follow up with a specialist.  He passed with flying colors.  Thank goodness. I was worried.  No one wants their child to have any hurdles to deal with or stumbling blocks.  The doctor was very impressed that he is such a healthy, active, vegan kid.  And he said he looks like he will be tall. 

Over the weekend I felt like making soup.  The weather here has been so pleasant.  A vegetarian friend had made two recipes from the 101cooks.com site.  They looked and sounded tasty.  I decided to give them a try and make them vegan.  Success.  I made a broccoli cheddar soup and a mushroom casserole.  For the soup, I just subbed cheddar Daiya.  For the casserole, I used soft tofu in place of the cottage cheese, extra sour cream replaced the eggs, and Daiya mozerella in place of the parmasan cheese.  The boys scarfed down the casserole. Yippee for getting young children to eat mushrooms!

The co-op meals have been delicious as usual.  I feel strange this time around in the co-op.  It as if I am on the outside looking in.  I sometimes wonder if the meals I send are shite because comments are made regarding all the other meals, but never the ones we send.  I am all about comments and constructive criticism, but never see any.  Fingers crossed they like the meals.  Feedback is good sometimes. 

Last week, we were sent a Greek lentil soup, sauteed greens, and persimmon bread.  The soup was unique and tasty.  It had a sweet taste to it.  We all loved the persimmon bread.  I don’t think I have ever eaten a persimmon.  At least not that I can remember. 

For my co-op meal last week, I made a Fall Chili.  It had winter squash, black beans, tvp chunks, you get the idea.  I added a chipotle pepper to the mix.  We liked it alot.   I think next time I will add a hot pepper for spice.  I served it with homemade bread and molasses cookies.

This past Monday, were sent a golden split pea soup with sour dough bread and a papaya salad.  Little Bear loved the soup.  Boogie not so much.  They both liked the salad and of course the bread.  It has been a hit or miss lately with their likes and dislikes.  It can be frustrating sometimes.  I love soup and as I mentioned the weather has turned cooler, so this was perfect.

Well October is here.  We love October.  It is our favorite time of year.  And of course Halloween is awesome. The boys helped put out the Halloweed decorations over the weekend.  Sunday we painted small pumpkins which the boys had a blast doing.  My pumpkin is the Frankenstien.  Boogie’s is the red one.  Little Bear painted the multi-colored one.  And Josh’s made a bat pumpkin per Boogie’s request.  Fun!

Today I am cooking for the dinner co-op.  Tomorrow is my delivery day, but as you know, I like to get a head start.  I am making “Good Shepherd’s” Pie.  As well as some kind of treat.  I love this shepherd’s pie recipe.  It is full of goodness.  Well I am off to peel a ton of potatoes.  Oy!  Hope you each have a lovely day.  By the way, check out our ‘Thrifty Vegans’ section.  I added a new installment.  And I forgot to mention on it, that I also got two hard plastic adorondeck style kids chairs for the boys.  Free!

  1. That brocolli cheddar soup looks yummy! I’m sure all your food for the co-op is as delicious as it looks and sounds, I know I’d be more than happy to recieve that Fall chilli, especially with yummy molasses cookies for dessert! If you’re not convinced and want to make sure you’re not missing your mark why not say you’re running low on inspiration and ask for some suggestions from the other members for things they like to eat? It may prompt the feedback you want! And I love your decorated pumpkins – what a great idea! Much less messy than carving! Hope you and the boys are keeping well, DJ xo

  3. all the meals look fantastic and I am so happy Boogie is fine. we had the same scare last year with my grand-daughter, but she also came out well…chow everything you get, it looks great.

  6. I reckon no-one comments on your Co-op meals because they are so AWESOME and leaves everybody speechless! But I know what you mean, a bit of feedback would be good AND help put your mind at rest. Your meals always look so delicious!
