As usual, I did some cooking this week. Tuesday is always soup day or crockpot day. I made Orange and Chipotle-Kissed Butternut Squash Bisque. It is a recipe from Robin Robertson. It is in her cookbook Vegan Planet. Such goodness. I served it with a homemade baguette and a side salad.
Wednesday, I made gyros. I did some searching on the world wide web to find the seasonings used to make gyros and a good Tzatziki sauce. Success! I marinated some soy curls, used some pitas, fresh tomatoes, onions, and spinach along with the Tzatziki sauce. Yum!
Last night I was tired and did not feel like cooking. That is a rare thing to happen around here. I was a bit under the weather. So, it was either take away or nachos. Josh made nachos. Easy and very tasty.
Well I am off to make some marinara and dehydrate some green beans. Normally, the two little guys wouldn’t touch green beans with a 10 foot pole. Thanks to dehyrating them, they are crunchy, so they love them. It is amazing what a dehydrator and changing up a vegetable a bit can do. They will each sit and eat a bowl full.
