Move over Oreos….

Now there’s Yummeos.  I know Oreos are vegan, but I still wanted to try my hand at making homemade oreos.  Boy, am I glad I did.  They turned out awesome.  The boys loved them.  I took some to my friend who works at my favorite thrift store.  She said they tasted just like Oreos just a thousand times better!  She’s right. 

And now we are sharing the recipe with you.  Drum roll please…..

Yummeos (our version of Oreos)

1 1/4c flour

1/2c cocoa powder

1t baking soda

1/2t baking powder

1/4t salt

1c sugar

1 stick margarine, plus 2 tablespoons, soft

1 flax egg


1/4c margarine

1/4c vegetable shortening

2c powdered sugar

1 1/2t vanilla

 Preheat oven to 375F.  Using the electric mixer, mix the dry ingredients.  Add the margarine & flax egg.  Process until a dough is formed. 

 Form dough into small balls, place onto parchment paper about 2” apart.  Using the bottom of a cup, gently flatten dough into a circle.  Bake for 12-15 minutes.  Remove from oven.  Let sit on the baking sheet for 5 minutes, then place on baking racks to completely cool.

Using your mixer again, cream together the margarine and shortening.  Add the sugar and vanilla.  Beat on medium speed until creamy.

 To assemble the cookies:  Place a spoonful of filling on a cookie, spread the filling around with a knife.  Top with another cookie to make a sandwich.  Yield:  approximately 36 cookies, 18 sandwich cookies

For even more goodness or cuteness I should say, the boys got their first official haircuts.  Boogie his hair cut.  Aren’t they adorable?

This is a short blog entry.  We have started pre-school/kindergarten homeschool for Boogie.  Since he turns 5 a few days after school starts, he will miss kindergarten this year.  This was our first week of learning, worksheets, projects, art, etc.  He did well. 

What are you doing for Father’s Day?  The boys and I are going to make Josh his favorite, peach cobbler.  Peaches are in season right now and as sweet as can be.  We are also making tandoori seitan and spring rolls.

      Thanks Brian. They honestly were 100 times better than regular Oreos. I think the fact that they weren’t filled with preservatives or packed in plastic makes all the difference in the world.
