Beans and greens….
This evening I made a recipe of our’s, it was swiss chard and potato quesadillas with homemade tomatillo sauce and Sara’s Tangy Black Bean Salad. The salad recipe is part of the La Dolce Vegan Challenge. It was tasty. I added Mexican oregano to it. Yum. The boys liked it as well. I made them potato, spinach, and Daiya quesadillas since I added cayenne to our swiss chard.
The La Dolce Vegan Challenge has been fun so far. I really like trying all the new recipes. There is such variety in it. We also want to say, “hi” to Raven at the Vegan Culinary Institute. Hope you are feeling better.
I forgot to post the calzones I made the other evening. Such goodness. I made some roasted eggplant and spinach ones and some vegan pepperoni, mushroom, and Daiya cheese ones. They are a favorite around here.
