A journey of cooking vegan food for my family.


For dinner today, we had Ethiopian food.  There was a cabbage in the fridge and some potatoes that needed to be used, so I did some interet research and found a lovelyEthiopian cabbage dish and a red lentil dish.  All that was missing was injera.  Mmm.

We went to our friend’s house before dinner and harvested some veggies from our little garden plot we have in her yard.  We harvested jalapeno and serrano peppers, mustard greens, swiss chard, collard greens, and Chinese cabbage.  We plan to go pick some lettuce on Sunday.  The lettuce is looking quite lovely and you can’t beat fresh, organic veggies and getting your greens.

Tomorrow is Thursday and I am glad.  I am looking forward to the weekend.  This week has been kind of “meh”.  We plan to take it easy.  Oh and make our faux fish and chips recipe as a treat.  Yay!

  1. I just love Ethiopian food. Do you have the new Papa Tofu Ethiopian cook zine? You should get it. It’s awesome! Also, I keep injera bread from our local Ethiopian restaurant in the freezer for when I make it at home.

      I haven’t gotten the new Papa Tofu. I need to. 🙂 One of these days I am going to figure out how to make injera. 🙂
