Weekend update…..

Good morning friends.  How was your weekend?  Our’s was low key.  Josh had to work Saturday.  Yesterday we worked in our little garden, made and delivered a cake and went to the park. It made for a relaxing weekend.

Friday night I made our etoufee recipe.  The recipe is a bit time consuming, but worth all the time and effort.  It makes a ton and freezes well.  Mmmm.

Saturday was leftover day.  Never waste food, there are to many people starving in this world.

Yesterday, I woke up and made us strawberry/peach pancakes and veggie migas.  Actually Josh made the pancakes and I made the migas.  We are a great team in the kitchen.  It was one of the best breakfasts we have had in a long time and the migas were by far our favorite type of scramble we have made to date.  They were amazing.  We are definitely keeping this one in the rotation.  I love the fact that it used a nutritional yeast sauce rather than packaged vegan cheeze.  Not to say that I don’t love the packaged vegan cheeze, I have just been trying to cut down on processed foods and make as much of our own as possible. I obviously can’t make soymilk or soy margarine and the boys love Cheerios, but I can make cheeze sauce, breads, granola, etc.

For dinner last night, I made “fish” and chips for Josh with a side of chipotle cole slaw. I used some bok choi in the cole slaw from our little garden plot.  This meal was so tasty.

Speaking of garden plots, yesterday we went to harvest from our little garden and came back with a ton of produce.  We harvested beet greens, swiss chard, bok choi, dinosaur kale, mustard greens, lettuce greens, mixed salad greens, okra, and some jalapeno.  Our friend also gave us a lovely eggplant from her yard as well.  We are so lucky to have such a good friend to share her yard with us. Yay for homegrown veggies!

Well,I am off to make a few things this morning while the boys watch a movie. Josh has to work a short shift this evening, so we plan to eat a quick dinner and take the boys to see Santa in order to beat the post Thanksgiving rush.

      I am using them mixed with some swiss chard to make swiss chard/potato quesadills. I have also used them in vegan quiche as well. The greens are richer in iron, calcium, and vitamins A and C. They actually have a higher iron content than spinach. Yay for beets! 🙂

  4. All the food Looks Fantastic!!, Love the avacado on top of the migas. I also try to cut out the processed food as much as Possible.
