Last night I made a mixed greens quiche. It was delicious. We used greens from our garden plot, beet greens, dinosaur kale, and swiss chard. I served it with a simple chickpea salad that was light and very tasty.
The weather is turning cooler here, but thankfully not so cold that the garden has died out yet. We are still eating greens literally everyday thanks to the garden going crazy. Yesterday I harvested mustard greens, bok choi, dinosaur kale, beet greens, beets, swiss chard, spinach, and salad greens. I told you we have a lot of greens.
Well, I am off to roast some sweet potatoes, and cook some red beans for tonite’s dinner. Hope you have a lovely Thursday. We are headed to the library and then watch a documentary.
