That’s Italian!!!!!

Well, Italian American.  Tonite, I made stuffed shells.  The picture isn’t so pretty, but man oh man was it tasty. I stuffed them with a cashew ricotta and pureed swiss chard from the garden into the ricotta.  We are it with a lovely loaf of homemade bread.  Another positive, the boys LOVED it. 

I am loving the fact that the boys have really been into greens lately.  They eat fresh, chopped spinach from the garden in their soy yogurt mixed with fresh strawberries.  They also ate some spinach in their fideo.  And as I mentioned, they had swiss chard tonite. 

This is a quick post, we are headed to one of our favorite places, the library.  Hope you have a lovely evening.

  1. Your boys are so lucky to have a mom like you. Of course they will learn to love greens, because you make everything so delicious and healthy. Everything looks so good. Please share your recipe for that cashew filling.

    I’ve made shells stuffed with a tofu ricotta, but never a cashew one. That sounds even yummier!
