Breakfast for dinner????
Yes, please! Last night, Josh requested breakfast tacos for dinner. How could I refuse that? Hello? Homemade breakfast tacos are awesome! We made tortillas, refried beans, never from a can. We also made some soyrizo, a recipe from ‘Vegan with a Vengeance’, roasted some potatoes, and made our tofu scramble recipe. It was full of vegetable goodness. We topped them with a little Daiya cheddar, salsa, and avocado. Yum! I was very happy to have the leftovers for lunch today. 🙂
Well, we are off to play at the park. It is supposed to rain tonite and all day tomorrow, so we plan to get some outdoor play in now.
