Friday! Taco Day!

It’s Friday.  Why not have something awesome like tacos.  And that is what we did.  I simmered some pinto beans in the crockpot all day.  The cooked in some homemade chipotle butternut squash soup I had in the freezer.  Best idea ever!  I made tortillas and we filled them with the pinto beans, kale, mushrooms, carrots, and served them with a side of roasted potatoes.  Yum!  They were delicious and very tasty.  I made a nutritional yeast sauce to drizzle over them and added a little hot sauce.  A great way to kick off the weekend.

Do you have plans this weekend?  We are going to take it easy.  Nothing planned, which is always nice.
