Nacho Daddy!

For dinner tonite, we had nachos.  Josh aka Daddy made them.  I messed up my LCL  in my knee, so I was resting, icing, and elevating it.  Good times.  I explained how to make the quinoa “meat”, and the chickpea chorizo.  The chickpea chorizo is a variation of a recipe my friend Tom made.  We topped them with a homemade nutritional yeast sauce, onion, tomato, salsa, avocado, and pickled jalapeno.  Mmmmm.
