Sunday morning goodness….

Every Sunday morning, we always have a big breakfast, whether it be tofu scramble and roasted potatoes, waffles, pancakes, or even homemade empanadas.  This morning was no different.  I made some lovely French toast using homemade sourdough bread I had made earier in the week. It was delicious and a big hit with the whole family.  I topped it with some fresh strawberries, a sprinkle of powdered sugar, and warm syrup.

Vegan French Toast

2c soymilk (or any other non-dairy milk)

1/4c all purpose flour

2T sugar

1T nutritional yeast

1t cinnamon

1/4t nutmeg

6-8 slices bread, sliced thick

Powdered sugar, (for garnish)

In a bowl, whisk together all the ingredients except the bread and powdered sugar.  Dip each slice of bread into the mixture.  *Grease your griddle or skillet with oil.  Cook on the griddle until golden brown on both sides.  Serve warm with fresh fruit and syrup. (*If you do not grease your griddle or skillet, your French toast will stick and fall apart.)
