Chillin’ and chili….

For dinner I made chili. I love a dish that is ready when I come home after a long day.  Yay for crockpots!  And the recipe made a ton.  We topped some tortilla chips with the chili and added vegan sour cream and fresh avocado.  Yummy!  My only complaint was I had hoped the chili would be a little spicier but wasn’t, even with two jalapenos added to the mix.  Mild jalapenos I guess.

If you have noticed a lack of La Dolce Vegan recipes, it is due to the fact that we need to withdraw out of the competition.  Timing is everything and right now is a bad time.  With Boogie in school, a very dear loved one who is deathly ill, being a full-time mum and homemaker, and possibly getting some part-time work due to paying Boogie’s tuition, I can’t commit to the recipes being done on time.  I wish everyone who is competing  the best of luck.  Thank you Joel and Raven.

Our Little Bear turns 3 this Monday.  What?!?!  For those of you who have been long time readers of this blog, you most likely remember when he was born.  I can’t believe our baby boy is growing up so fast.  Stay tuned for some fun birthday cupcakes.

Today we cooked….

We didn’t do much cooking over the weekend.  Saturday we had leftovers and Sunday we were visiting a loved one.  Monday is usually our weekly baking day, so I went to work. I made our field roast recipe which is a favorite of Boogie.  I also made granola, an asparagus/edamame salad, sandwich bread, peach shortcake, and some basil pesto.

Toasted Oil-free Granola from the La Dolce Vegan Challenge.  It is delicious.  We all love it.  The boys had some with soy yogurt.

Another lovely recipe from the La Dolce Vegan Challenge is Wolffie’s Peach Shortcake.  This was terrific. I just wish I had fresh peaches instead of frozen. It was a real treat.

For dinner tonite, I made the Edamame Asparagus Couscous Salad, it is also from the LDV Challenge. I have made this recipe before.  It is super good.  I added some chickpeas to it and used quinoa because I had no couscous.

I just wanted to say, “hi” to Raven who started the La Dolce Vegan Challenge and a big thanks to Joel for running it.  Hope you are feeling better Raven.  We are sending lots of love your way.

Frito Friday…..

I was tired this evening and wanted to make something tasty and easy.  So, I give you frito pies.  We topped them with pickled jalapenos, vegan sour cream, onion, and fresh avocado.  Earlier in the day, I had this great idea, I was going to make tacos.  That was forgotten about immediately.  We had a long day.

On a positive note about today.  Boogie was introduced to the trumpet in music class today.  For barely being 5 years old, he took to it like a natural.  Hmm, I wonder if someone wants to give us a trumpet for Christmas or Hanukkah.  🙂

I also made Claire’s Macaroni & Cheeze.  It is a recipe from the La Dolce Vegan Challenge.  The boys loved this mac and cheeze.  Little Bear took to it without hesitation.  He polished off a bowl full in no time.  Yay!

Well, tomorrow is Saturday?  Do you have any plans?  It is supposed to rain here, so depending on the weather will depend on whether or not we stay in or out.

Curry and Cookies….

Not together, that would be weird, or would it?  You never know.  Stranger things have happened.  For now, they are seperate.

For dinner this evening, I made a “Clean out the Fridge” Curry.  It was super yummy.  It had potato, spinach, serano pepper, onion, garlic, ginger, black beans, carrots, mushrooms, okra, corn, coconut milk, and yellow curry powder.  It was served over brown rice.  You can’t go wrong with curry.  I love it.

Now for the cookies.  The cookies are part of the La Dolce Vegan Challenge.  It is the ‘Nutty Oatmeal Raisin Cookies’.  The changes I made was subbing dried cranberries for raisins. I am so not a fan of raisins. I joke and call them, “Raisins ugly cousin.”  Hee hee.  I also added some slivered almonds.  They are so tasty.  I like that there is not a crap ton of sugar in them as well.

Tomorrow is Friday.  Yay!  We plan to relax tomorrow evening and have no clue as to what we are doing for the weekend.  Do you have plans?

Burritos and Bagels….

Well, not together.  I made bagels this morning.  My guys love bagels.  I have searched the world wide web for an authentic New York Bagel recipe.  This one was okay, definitely not authentic.  It was more bread-like than bagel.  The boys loved them.  I made sesame seed, chia seed, cinnamon sugar, and plain.  I am hoping to find a super good bagel recipe, because everyone knows homemade is so much better than store-bought.

Now, onto the burritos.  This burrito is part of the La Dolce Vegan Challenge. I was looking forward to this recipe because I love burritos.  I opted for roasting the sweet potatoes instead of boiling and mashing them.  I also turned them into super burritos, I added chopped mushrooms, salsa, fresh spinach, some serrano peppers from my friend’s garden, and added fresh avocado.  Our 2 year old loved them as well.  Our 5 year old opted for soy yogurt and granola.  This meal was great.

Who is Jay-Lo?

The only J-Lo I’ve heard of is JenniFUR Lopez.  I spell her name like that because she likes to wear dead animals on her back, but we won’t go there this evening.

Now this Jay-Lo makes some pretty tasty vegan fried chicken.  This recipe was a hit with my whole family.  I served it with some mashed potatoes, a homemade brown gravy, and a spinach/corn mix.  Yum!

After last week’s slump, we are now on track with the La Dolce Vegan Challenge.  We have all been there, it was one of those week’s where I was feeling, “Meh.”  But no worries, I’m not a quitter.  I’m Scottish and Irish, meaning I’m stubborn.  I’ll admit it.

Just a quick shout out to Joel for taking care of the challenge.  You rock!  And thanks to the Vegan Culinary Institute.

Welcome Fall…..

What better way to start a new season than with a delicious apple raspberry crisp?  This type of dessert reminds me of Fall.  The weather has cooled a bit here, finally.  For us, anyway. It has cooled down to 90F, which is a cool breeze compared to the 106F we had been having. I love everything about Fall, apples, pumpkins, the changing of leaves.  So, this dessert hit the spot.

I couldn’t find raspberries at the store, so subbed mixed berries for the raspberries and I cut the sugar to 1/8 cup.  It was great.  We all loved it.  I am going to make it again as a breakfast treat for my guys.

Goulash….Galosh

 

 

Last night I made the “Marianne’s Goulash” recipe from the La Dolce Vegan Challenge.  It was quick and easy and the kind of dish you would eat on a rainy evening.  Speaking of which, we finally got some freaking rain.  Okay, back to the meal.  It kind of reminded me of a burger mac dish from my childhood.  I always thought goulash was a bit more stew like.  This meal pleased my two little guys to no end.  I added some finely chopped spinach and carrots to the dish.  It made a ton.

Do you have plans for the weekend?  Tomorrow, Boogie is participating in a running activity.  Then we have a potluck.  Sunday, we are planning a bike ride to the park and hopefully getting in a 20 mile bike ride.

Here Wolffie Wolffie….

Who is Wolffie?  I am asking because I have seen his name a few times in the La Dolce Vegan Cookbook.  He must be a pretty awesome dude because his recipes rock.  Last night’s LDV challenge recipe was, Wolffie’s Delicious Dressing.  The dressing was simple, but wow was it tasty.  I made a simple spinach salad to accompany the dressing.  Yum!

We also had our swiss chard/mushroom dinner pie recipe as well.  It is so tasty.  It was extra green thanks to all the fresh swiss chard our friend Rhonda gave us from her garden.  She gave me a very full bag of chard.  It made the dinner pie even tastier.  The pie crust was flaky and perfect. I prefer homemade over store bought.  I am spoiled.  Hee hee.

We had a very busy day today.  Fun, but busy.  We spent the day at Boogie’s Waldorf Homeschool and celebrated Michaelmas.  The kids had a blast making dragons out of bread dough, they sang songs, played together, made dragons out of wax, as well as making felt dragons.  I used our Panettone bread recipe and made the dough for all the kids.  They really enjoyed making the dragons and eating the bread later.  The boys had so much fun and we beat the rain home.  I was a bit worried because I had our camera in the back of the bike trailer.  As you know, water and most cameras do not mix.

Mmm puddin’…..

Today’s recipe from the La Dolce Vegan Challenge is mixed berry pudding.  How can you resist homemade pudding?  Yum!  Homemade pudding is the best.  It is so much better than the store-bought stuff.  The boys were thrilled about this one.  And thanks to Joel’s tip to keep whisking, it was delicious.  Thanks Joel.

For dinner, I made something simple.  I am tired today, after moving furniture yesterday and taking Boogie to school via bike all day, I wanted to make something easy.  I made us a simple pasta dish.  It has fresh garlic, fresh basil, tomato,spinach, artichoke hearts, a little olive oil and sunflower seeds.
